I spent a month cooking in Thailand, and make a lovely (vegan) green curry using local Phoenix Bean Tofu, bamboo, bell peppers, and Thai eggplants and basil with coconut and mushroom broth, as well as our own curry paste made of lemongrass, galangal, makrut leaves, Thai chiles and basil, cilantro roots, shallots, garlic, and our own ferment for umami. Served with our mixture of white and brown rice.
