Vegan Rite of Spring: Early Spring Offerings

It will officially be spring in Chicago, and we’re very excited to feature excellent produce that is just coming into season! We’ll feature grilled asparagus, pomelo, a chickpea and cardoon soup, whole braised artichokes, and a wonderful Tunisian orange cake with candied kumquats.
“Vegan Rite of Spring: Early Spring Offerings,’ isn’t just a good name for a metal album, we’ll stay true to the season.
All the wonderful spring produce, featured in a meal right after the solstice.

That said, here’s the menu for the evening:
Asparagus, citrus, sesame, hollandaise.
Grilled asparagus, pomelo, warm hollandaise, herbs, and smoked-sesame cracker.
Garbanzo and Cardoon Soup
Fresh chickpea and cardoon soup, with almond feta, sumac oil, pomegranate, and barberries.
Rich, earthy, and silky soup, with herbal and sour notes accented with fatty olive-oil marinated almond feta.
Whole Braised Moroccan Seasoned Artichoke
Whole artichoke trimmed of its tough parts, and braised in a rich seasoned broth until tender. Served with smoked lentils, bulgur, parsley, preserved lemon and saffron aioli.
This is whole vegetable cookery at its finest.
Tunisian Orange Cake
A rich Tunisian orange cake, with almond crust, candied kumquat with citrus syrup, and whipped cashew cream.
