Vegan Pasta Making Class

We’ve been doing a lot of pasta work lately, and are ready to teach what we’ve learned. We’ll be making 2 different styles of dough, and several different pasta shapes. All of this we’ll be turning into a nice lunch for us to eat, and you’ll get a nice recipe book to take home as well. This is a very hands on class, and once you get the hang of making homemade pasta, it becomes therapeutic, and you can make a bunch to dry or freeze for later. Hope to see you in class!

That said, here’s the lesson plan:

Semolina Dough: Orecchietti and Trofie
Semolina dough is one of the most basic pasta doughs there is, and while there aren’t many ingredients, all the skill is in making the dough, and making the different pasta shapes. Each of these we’ll serve with a rustic tomato sauce, herbs, and freshly grated almond ricotta for lunch.

Aquafaba Ravioli Dough
We call it ‘ravioli dough,’ but in reality, this pasta dough is used for every stuffed pasta, as well as tender noodles. This dough took many, many experiments to get right, and we’ll show you what we’ve found!

Almond Ricotta filled Ravioli
Making ravioli is one of the easier stuffed pastas, and we’ll be filling them with a lemony almond ricotta.
For lunch, I’ll provide several different additions for the pasta you make and cook!

Almond Ricotta filled Mezzaluna
Mezzaluna means ‘half moon’ and while it is a different shape, we’ll fill them in the same style as the ravioli, and have many different additions to add to it for lunch.

Agnolitti filled with Mushroom Sugo in Tomato Brodo
Agnolotti is a challenging, but really fun pasta to make, and we’ll serve them in a nice tomato brodo for lunch.

A Nice Chopped Salad
There’s a lot of pasta happening, and one can’t live on carbs alone! I’ll make us a nice vinegary chopped salad to enjoy with our lunch.
