Vegan Cheese Feast

This is a really fun menu that showcases many of the different cheeses we’ve been making lately! From our signature burrata, to our almond parmesan, to our feta, mozzarella, and almond ricotta, each course will feature a different cheese.
A really fun meal if you would love to indulge, but we’ll be sure to add plenty of fruits and vegetables so you don’t feel too guilty…

This 5 course vegan cheese dinner is an all inclusive (no tax, no tip!) $39, and reservations can be made here.

That said, here’s a look at the menu for this evening:

Cashew Burrata & Housemade Country Bread
Just recently we were able to make vegan burrata! I’d always considered burrata to be the ultimate soft cheese, as it is a mozzarella that has a creamy, rich, not-quite-set filling, encased in a stretchy, more formed mozzarella shell. It is solid on the outside, and soft on the inside making it eminently spreadable, and totally addictive. We’ll drizzle nice green olive oil over it, salt, pepper, and serve it with our house baked bread.

Grilled Asparagus with Romesco and Almond Parmesan

We’ll grill fresh, seasonal asparagus with lemon, chile, and sea salt, and serve it with a rich romesco sauce, topped with our grated housemade almond parmesan.

Lettuces with Pear, Almond Feta, and Herbs

Sharp and crisp lettuces lightly dressed with a lemon vinaigrette, and topped with a generous portion of our housemade almond feta and herbs.

Lasagna with Cashew Mozzarella and Smoked Lentil Bolognese

During leaner times, lentils would be used in place of the meat bolognese that might be in a lasagna. I love this dish, and we smoke the lentils to make it have a richer, meatier taste.
To this we add a meltable cashew mozzarella, almond ricotta, a rich tomato sauce, some torn basil, and our housemade lasagna noodles.

Preserved Cherry and Almond Ricotta Strudel
We’ll make an excellent cherry preserve and bake it with our almond ricotta into a light, crisp strudel dough.
