French Family Style Feast with Vegan Croissants!

I really enjoy simple French dishes that use spring and summer produce, and can be shared with friends!
That said, after several tries, I feel like we’ve begun to make really beautiful, flaky, vegan croissants.
Come join us around the table and enjoy the bounty of spring! We’ll end with our homemade croissants, served with strawberry rhubarb jam.
That said, here’s a look at the menu this evening:
Soup au Pistou
‘Pesto Soup’ is a classic Provencal French dish often using summer produce, but we’re going to adapt it for spring!
We’ll use fresh shelling peas, rainbow carrots, butter potatoes, grilled cucumber, tomatoes, and vermicelli, and top it off with a bright green basil pesto.
Frisee and Asparagus Salad
Bright frisee, grilled asparagus, and glazed pearl onions will be dressed in a whole grain mustard and red wine vinaigrette, and tossed with fresh parsley, tarragon, and chives.
Smoked Trumpet Mushroom and White Bean Cassoulet
Creamy white beans and smoked king trumpet mushrooms will be baked with a mirepoix of carrots, onion, and celery, and plum tomatoes. We’ll top it off with garlic-herb breadcrumbs, and bake it to perfection.
